HEALTHY CARROT CAKE

I love eating cake and the only thing I love even more is eating carrot cake. As I started to care about my body and health and changed my lifestyle as well as my eating habits I noticed something was missing. I started to feel a kind of emptiness, it felt awful. You probably already guessed it, the carrot cake was missing. So I ran into my kitchen as fast as I could and started to work on a new recipe for a healthy carrot cake. Needed 3 attempts to make it perfect, but I finally made it and now I can proudly present you my recipe. You should not miss out to try it!

The big difference between normal carrot cake and my version is that in my version no sugar is added. All the sweetness comes from the carrots and the zero calories sweeteners from the protein powder. Here we go!

Recipe

Ingredients

Carrot Cake:

  • cake
  • 2 cups of flour
  • 1 scoop of WHEY protein powder vanilla
  • 1/2 cup melted coconut oil
  • 1/2 cup of unsweetened apple sauce
  • 2 grated carrots
  • 1 tbsp baking powder

Vanilla Frosting:

  • 4 tbsp of cream cheese
  • 2 tbsp Greek Jogurt
  • 1 scoop WHEY protein powder vanilla

Instructions

  1. Preheat oven to 350°F / 180°C.
  2. Mix all ingredients for the carrot cake. Pour the mixture into a baking tin and bake for ca. 25 – 30 minutes.
  3. Mix all ingredients for the frosting.
  4. After letting the cake cool down pour the frosting on top. Decorate with nuts or whatever you like and enjoy!

When I started to pour the frosting on top my heart started to beat faster. It looked perfect. Only 1 minute later I gave it a try and it was delicious.
