My mother always used to make thin pancakes (in my language they are called “blinchiky”) and I loved them. The problem was that they are super unhealthy as they are made out of flour, sugar and milk. I never could live without blinchiky so my mission was (as always) to make a healthy version. And in my opinion I did a good job. At least I liked them so much that I ate all of them by myself although I wanted to make some for my whole family. The recipe is simple and it takes only a few minutes to make the pancakes. Perfect for busy mornings!

Ingredients (for 4-5 pancakes)
- 60g oats
- 100g low fat Jogurt
- 1 egg, 1 egg white
- 50 ml milk (of choice)
- oil (for frying)
Instructions
- Mix all ingredients (minus the oil).
- Heat some oil in a pan.
- Fry the pancakes. 1 minute on one side and 30 seconds on the other (or until golden brown).
- Enjoy!
