Chicken & rice. A classic fitness meal. But it’s usually super dry. And to be honest plain rice and chicken just tastes like shit. But it doesn’t have to! It can actually taste incredibly delicious. In this recipe I marinated the chicken, added some veggies and eggs and a few tablespoons of soy sauce to improve the taste. It made a huge difference. The next time you have a limited amount of time and decide to cook this classic fitness meal make yourself a favour invest 10 more minutes and make this version. Thank me later.

Ingredients
- 250g chicken
- 250g brown rice
- 3 eggs
- 1 onion
- 1 carrot
- 1 handful broccoli
- 1 tbsp garlic
- 3 tbsp sugar reduced ketchup
- 2 tbsp oil
- 1 tbsp honey
- 3 tbsp soy sauce
Instructions
- Cook the rice.
- Marinate the chicken with ketchup, oil, honey and salt & pepper.
- Fry veggies and garlic. Put in one half of the pan. Make scrambled eggs out of the eggs on the empty half.
- Take out of the pan and fry the chicken.
- Then turn down the heat, add the veggies & eggs and rice. Add soy sauce.
- Mix everything together and serve instantly. The fresher it is the better it tastes!
